With close to 20 years of experience in the food business and known for its consistently good food at affordable prices, Rasel Catering Singapore now adds a Chinese banquet menu to its portfolio, which includes everything from round tables with the lazy Susan, auspicious dishes, wedding themes and professional wait staff. Now you can have your Chinese and eat it too...anywhere! Creative director and co-founder Chris Loh elaborates.

Why have you decided to start a Chinese banquet menu?

More couples are holding their weddings at unique and modern locations, but they still want to show respect to their families by serving a traditional menu.

What is included in the package?

It comprises an eight or nine-course menu, full table settings, wedding theme of your choice, nicely dressed round tables with cushioned chairs, fresh floral centrepieces, free-flow soft drinks and Chinese tea, cordial served at cocktail hour, professional wait staff and complimentary food tasting for six.

How much does it cost and where do you offer the banquet?

It ranges between $80 and $100 per person. If you have a bigger budget, we can customise the menu such as add live stations or dessert table. Currently, we offer Chinese banquets at Gardenasia, Gardens by the Bay, Singapore Flyer, SkyGarden, The Arts House and The Star Performing Arts Centre.

What are some of the must-try dishes?

Aside from the fish, chicken and lotus seed dishes that are served for their symbolic meanings, I recommend the Butterfly Prawn with Singapura Crab Sauce – for a local twist and to celebrate our nation's jubilee.

Is Rasel Catering able to do the wedding décor?

Our team of professional wedding consultants — known as Artisans of Joy, work closely with our in-house florist to conceptualise wedding themes and settings. Couples can also meet with them to discuss décor details and props required for their celebration. The service crew can also dress to theme if they like!

How far in advance should couples book a Chinese banquet?

About six months in advance is sufficient because a traditional menu is quite fixed, unless couples need it prepared in a certain way. For artisanal weddings, a timeline of 12 months will be ideal so that there is ample time to plan and work towards making it a fantastic event.
